Ingredients
5 dandelion lettuce leaves
6 kumquats
1/2 cup skate wing (poached)
1/2 cup mung bean sprouts
1/4 cup pomegranate
1 tbsp daikon cress
1 tbsp unsalted almonds (roasted)
1 tbsp extra virgin olive oil
shaved pecorino (garnish)

chopped fresh fennel* salt and black peppercorn to taste*
Method
Prep—
1. Prepare your palette board:
Roast, chop and grind the following ingredients and place them on a blank slab—
dandelion lettuce leaves
skate
kumquats
pomegranate
mung bean sprouts
daikon cress
peppercorn
unsalted almonds (roasted and ground)
pecorino
2. Pour the oil into an empty bowl followed by the dandelion lettuce, and a pinch of peppercorn and salt. Toss in the cooked skate wing, kumquats, mung bean sprouts, daikon cress and combine. 3. Garnish with ground unsalted roasted almonds, fresh fennel, and shaved pecorino.
