Ingredients
1 dragon fruit
4 spearmint leaves
1 tbsp water
1 tbsp olive oil
1 tbsp sugar
1 and 1/2 tsp cumin seeds
1 and 1/2 tsp mustard seeds
1 tsp garlic cloves
1 tsp coriander
1 tsp white vinegar
1/2 tsp red chili powder
1/2 tsp salt and salt to taste*
Method
Prep—
1. Prepare your palette board: Measure and chop the following ingredients and place them on a blank slab:
dragon fruit
peppermint leaves
water
olive oil
sugar
cumin seeds
mustard seeds
garlic cloves
coriander powder
white vinegar
red chili powder
salt and salt to taste*
Heat—
1. Heat a cast iron skillet on medium-high and pour in the oil, garlic and salt. Let cook for one to two minutes. 2. Add the mustard seeds and cumin seeds and cook for an additional one to two minutes on medium heat. 3. Next, add the coriander powder, red chili powder and sugar. Three to four minutes on low-medium heat. 4. Pour in the water and add the dragon fruit. Let cook for five to six minutes or until dragon fruit is softened. 4. Pour in the white vinegar and add the mint leaves. Cook for an additional one to two minutes. Salt to taste. 5. Heat off. Serve as a condiment to your favorite dish.
