Greek Style Yogurt

Ingredients

1 cup whole milk

1 tbsp greek yogurt

Method

Heat—

1. In a medium sauce pan, heat the milk to 180 degrees F. Heat off. Let the milk cool to 112 degrees F. 2. Add the tablespoon of yogurt and stir. 3. Transfer the milk and yogurt mixture to a glass sealed container. Rest for eight to ten hours in a warm environment. Oven with the light kept on. 4. Lay a small cheesecloth or muslin cloth over the brim of an empty small container. Pour the yogurt over the muslin cloth into the jar. Let it extract by itself in the refrigerator until all of the liquid (whey) from the top portion has transferred from the muslin cloth to the bottom of the jar.

5. Pour the mixture that is canopied in the muslin cloth into a third container. Keep in the refrigerator until ready to serve.
