Lemon Fig Mascarpone Vinaigrette

Ingredients

3/4 cup extra virgin olive oil

1/2 cup lemon juice

1/4 cup fig nectar

2 tbsp mascarpone

1 tsp shallot

1/2 tsp garlic

1 tsp salt

1 tsp water


Method

Prep—

1. Prepare your palette board:

Chop, squeeze and grind the following ingredients and place them on a blank slab:

lemon

dried fig

mascarpone

shallot

garlic

salt

2. Combine salt, shallot, garlic, fig nectar and lemon juice in a mixing bowl. Add the mascarpone. Mix with a whisk. Pour the olive oil in small increments until soluble is well formed. Add water to thin the liquid to choosing.

Taste and Enjoy!
