Little Raspberry Jam

Ingredients

2/3 cup fresh raspberries

1/2 cup cane sugar

1/2 tbsp juice lemon


Method

Prep—

1. Prepare your palette board: juice and measure the following ingredients and place them on a blank slab:

fresh raspberries

cane sugar

juice lemon

Heat—

1. Place the raspberries, lemon juice and sugar into a small saucepan and turn heat on medium-high. Using a spatula or spoon, slowly stir the ingredients together until the sugar has completely dissolved and the mixture is boiling.

2. Reduce the heat to a simmer, stir continuously, and wait for the mixture to become slightly gelatonous — ten to fifteen minutes — checking every few minutes for a mild stick left upon your stirring utensil.

3. When proper stickiness is reached, turn the heat off and allow the mixture to cool for five to ten minutes.

4. Transfer to a sterilized mason jar, seal it, and store at a chilled temperature in the refrigerator until ready to use.
