Peanut Butter Oatmeal Chocolate Chip Cookie + sunflower seeds, dried coconut, cranberries, almonds

Ingredients
1 large egg
1 cup oat flour
1 cup rolled oats
3/4 cup brown sugar
1/4 cup greek yogurt
1/2 cup peanut butter
1/2 cup unsalted butter
1/3 cup dried cranberries
1/3 cup sunflower seeds
1/4-1/2 cup dried coconut flakes
1/4 -1/2 cup shaved almonds
2 tbsp coffee beans
1 tsp cinnamon powder
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp la la baleine salt
Method
Prep—
Prepare your palette board: Grind and measure the following ingredients and place them on a blank slab:
large egg
oat flour
rolled oats
brown sugar
greek yogurt
peanut butter
unsalted butter
dried cranberries
sunflower seeds
dried coconut flakes
shaved almonds
coffee beans
cinnamon powder
baking powder
baking soda
la baleine salt

2. In a large mixing bowl, combine the dry ingredients: flour, salt, cinnamon, ground coffee, baking powder and baking soda. Lightly toss the bowl in order to fully incorporate the ingredients. 3. Using a stand mixer in a separate mixing bowl of the same size— combine the unsalted butter with the brown sugar until the sugar has dissolved into the liquidated butter. Next, add the greek yogurt followed by the peanut butter and continue to mix until fully incorporated into the butter. Finally, add the egg and whisk gently until a fluffy batter begins to take configuration.
4. Transfer the dry ingredients from the first bowl into the bowl containing the wet ingredients in small increments and continue to mix until a thickened sticky batter flourishes.
5. Add-ins: one at a time, mix in the rolled oats, followed by the sunflower seeds, dried coconut flakes, mini, chocolate chips, and finally the shaved almonds until all ingredients manifest a balance within the batter. 6. {Optional:}* Let the newly formed batter chill in the refrigerator until ready to form into dough balls and then bake or move on to the next step. 7. Prepare a baking sheet with a piece of parchment paper and using the palm of your hand, roll the batter into small spheres one at a time. Align them spaciously upon the baking sheet.

Heat—
1. Preheat the oven to 350 degrees F.
2. Place the prepared baking sheet into the oven and let the dough balls cook for fifteen to twenty minutes. Remove from oven. Let cool seven to ten minutes. *Repeat baking sheet preparation until the remainder of batter is released from the mixing bowl, shaped into small spheres and then placed upon a second baking sheet directly into the heat of the oven for fifteen to twenty minutes. Remove the additional cookies from the oven and let all cool for at least ten minutes.
