Spiced Whipped Cream

Ingredients

2 cups of heavy whipping cream

5-7 tbsp cane sugar

2-2 and 1/2 tsp cinnamon

1/4 tsp marshmallow root

1/4 tsp elderflower

1/4 tsp mugwort

1/4 tsp nutmeg

1/2 tsp kosher salt


Method

1. Prepare your palette board: measure and grind the following ingredients and place them on a blank slab:

heavy whipping cream

cane sugar

cinnamon

marshmallow root

elderflower

mugwort

nutmeg

kosher salt

2. In a medium sized mixing bowl, add the heavy whipping cream and two tbsp of the cane sugar. Begin to incorporate the cream and sugar using a whisk. 3. Incrementally add the rest of the sugar two tablespoons at a time, followed by the spices one at a time as you continue to whisk. Mix until stiff peaks begin to form. 4. Seal in an air-tight container and store chilled in the refrigerator until ready to garnish a dish.
