Smoked Bay Leaf Mulled Port Wine

Ingredients
2 cups Port Wine
2-3 smoked bay leafs
1 cinnamon stick
1 zest clementine
2 and 1/2 tbsp birch syrup
1/2 tsp ground cloves
Method
Prep—
1. Prepare your palette board: Grind, chop and measure the following ingredients and place them on a blank slab:
Port Wine
bay leafs
cinnamon stick
zest clementine
tangy birch syrup
ground cloves
2. Using a lighter, light the ends of the bay leafs to singe.
Heat—
1. Pour the wine in a saucepan or pot on stove top followed by the burnt bay leafs, spices and zest. Heat the liquid on medium high and bring to a boil, then immediately lower to a simmer for fifteen minutes. Remove from heat. Let cool.
