Smokey Black Cardamom BBQ Sauce

Ingredients

1 shallot

5-6 black cardamom pods

1/2 cup apple cider

1 tbsp balsamic vinegar

1 tbsp tamarind skins

1 tbsp blackstrap molasses

1 tbsp smoked bourbon sugar

1/2 cup & 3 tbsp brown sugar

1 tsp paprika

1 tsp Worcestershire Sauce

1 tsp cracked black peppercorn

1 tsp grapefruit peel

1 tsp horseradish

1/2 tsp cloves

1/2 tsp cinnamon

3/4 tsp kosher salt



Method

Prep—

1. Prepare your palette board: Measure, chop and grind the following ingredients and place them on a blank slab:

shallot

black cardamom pods

apple cider

balsamic vinegar

tamarind skins

blackstrap molasses

smoked bourbon sugar

brown sugar

paprika

Worcestershire Sauce

cracked black peppercorn

grapefruit peel

horseradish

cloves

cinnamon

kosher salt

Heat—

1. In a small saucepan, pour the mixture and let it come to a healthy boil and then let simmer for five to ten minutes. Continue to stir as you watch the mixture cook and taste as you go adding salt according to your preference. 2. Heat off. Let cool.

3. Blend the ingredients together in a food processor until smooth. Contain in a storage container and set aside or refrigerate until ready to indulge!
