Whole Grain Ale Mustard

Ingredients

7/8 cup black mustard seeds

1/2 cup white vinegar

1/3 cup Duvel Golden Ale

2 tbsp jaggery

1 tbsp honey

1/2 tsp turmeric

1/2 tsp chicory

1/2 tsp safflower

1/4 tsp garlic

1/4 tsp cinnamon

1/4 tsp pepper

1/4 tsp salt


Method

Prep—

  1. Prepare your palette board:

Measure, grind and chop the following ingredients and place them on a blank slab:

black mustard seeds

white vinegar

Duvel Golden Ale

jaggery

honey

turmeric

chicory

safflower

garlic

cinnamon

pepper

salt

2. Combine the vinegar and ale in a medium mixing bowl and add the mustard seeds. Soak them until all of the liquid has been absorbed. Twelve hours.

3. Add the cinnamon, chicory, garlic, safflower, pepper, salt, honey, jaggery, and turmeric and and pour the mixture into a food processor.

4. Grind the mixture until well combined adding water to thin the liquid to liking.

5. Place the mustard in a glass jar and store in the refrigerator for twenty four hours before serving.
